Ingredients For Making Mini Blueberry Muffins:
- ½ cups of coconut sugar
- ½ teaspoon of baking powder
- 1 to ½ cups of oats and flour
- ¼ teaspoon of salt
- ¾ cups of buttermilk
- 1 egg
- ¼ cups of oil
- ½ teaspoon of vanilla extract
- ¼ cups of unsweetened applesauce
- 1 cups of frozen mini blueberries
How To Bake It
Now, the ingredients are ready with you. So, you need to prepare the fresh mini blueberry muffins. First of all, you will have to preheat your oven to at least 425 degrees and then line a mini muffin tin with liners. You need to whisk all the dry ingredients together along with the lemon zest. Now, you will have to pour all the wet ingredients except the frozen blueberries into the whisked dry ingredients and keep mixing. After that, you will have to coat the blueberries lightly with flour and then fold them into the mix. Now, you need to add this to the muffin tin and the batter should reach the top of each muffin liner.
Here, you will have to bake it for 15-20 minutes until you can feel the fluffiness as well as it looks soft. Now, turn the oven off and let it cool on a baking rack.
